Okay Carla, Here Ya’ Go…

Carla, you commented that I need to share some recipes…..so here’s one:

This is the recipe that I almost always bring to a church picnic or dinner. It’s a hit and wait till you see just how easy it is! Upon tasting, one might think that I slaved in the kitchen all day….

Linny’s Chocolate Chip Pie
1/2 cup chopped walnuts
1/2 cup semi-sweet chocolate chips
Place walnuts and chips in the bottom of a unbaked pie shell. (If you are so inclined to make your own pie crust – you go girl! This chica never has had much success at making her own crusts, so I opt for buying them.)
1 stick (1/2 cup) butter melted. Not the plastic margarine stuff….the real thing!
2 eggs (beaten)
3/4 white sugar
2 T. whole wheat flour (this is the part where we pretend it is good for us, at least our colon thanks us! And yes, I suppose white flour will do, but then one can’t pretend that this pie has any redeeming value at all.)
Mix butter, eggs, sugar and flour by hand.
(Well actually using a spoon or spatula, but you get the idea.)
After mixing ingredients, add in:
1 tsp. vanilla
Pour this entire mixture (butter, eggs, sugar, flour & vanilla) on top of nuts and chips.
Bake 30-35 minutes in 350 degree oven. It should not be jiggly. If it is, turn oven to 300 and cook for few more minutes. Of course, if you are using a store bought pie crust, be sure to place your aluminum pie container on top of a cookie sheet while baking.

Some of my family like it best after it’s gotten cold in the refrigerator. You decide and let me know what ya’ think!! Most of our kids prefer this to a cake on their birthday.

    I can't believe the honor of having my name on the title of one of your posts! After being up half the night with a cold baby calf on my kitchen floor, it was the perfect Valentine's Day present! (Yes, the floor was scrubbed afterwards at 3 in the morning…)
