Pumpkin Coconut Bars

With all nine kids at VBS I’ve been working almost nonstop on the book.  But today I realized I better take a break before the week was up! After all, it would be probably illegal to let the week fly by without doing something different! This week has been an amazingly wonderful and quiet treat!

Most days I’ve typed for about 12 hours straight but today a little rest was in order! Thank you for all your suggestions!  They were super fun to read! I took some of you up on yours (more about that later).  But I also remembered something that I hadn’t thought of in a long time.

I used to bake almost daily, often making up my own recipes!  Adding more and more kids, then medically fragile ones, throw in a lot of doctor appointments and therapies and my baking and inventing slowed to a trickle…and truthfully I’ve missed it!

So as they were going out the door I looked in the pantry and found a can of pumpkin!  A few months ago my health necessitated that I move to a special diet…it’s complicated but it’s along the lines of paleo with a few other restrictions.

Anyway, personally I love anything pumpkin!  Any other pumpkin lovers out there? Seriously, add some coconut oil and coconut flour…oh man!  Now we’re talkin’….

Super simple ingredients, quick to mix and “so moist and yummy”  according to ten taste-testers who came in the door not too long ago.  Ruby couldn’t eat them fast enough!  Three cheers for a freshly invented recipe that tastes yummy cause I’ve definitely had more than my share that didn’t!  Another upside to teenage boys is that they will eat anything!

Here’s what I dumped placed in the mixing bowl:

Eight eggs

   1 can pumpkin

1/2 cup Coconut Oil

 1/2 cup Honey

 2  teaspoons Water

3/4 cup coconut flour

3 [slightly heaping] Tablespoons Cinnamon

2 teaspoons baking soda

Beat pumpkin, eggs, oil, honey,water, coconut flour, cinnamon and baking soda all together with a hand mixer until it is thoroughly mixed.  Pour mixture into an coconut oiled glass casserole dish.  Bake on 375 degrees for about 20ish minutes.

If you do it while your family is not home you will probably have enough time to eat 1/2 of it.  Kidding.  Sort of.  So moist it almost melts in your mouth!  

I actually ate so much I thought I should put it on a plate before they got home so they wouldn’t see how much of the casserole dish I had devoured.  I didn’t, but I confess I totally thought about it no less than six times!  Hey don’t judge.  Everyone keeps telling me I look scrawny and need to put on weight.  I’m merely trying to get them off my back. Haha.

    And CAN I TRY SOME OF THOSE BARS PRETTY PLEASE. xD I don't think I've had much of pumpkin anything (well, except for pumpkin pie, but I mean who hasn't had pumpkin pie?? ;)) but maybe I should try these sometime!
